- Live demos of techniques like nixtamalization, tatemado, and metate grinding
- Key ingredients: criollo corn, cocoa, dried chiles, and ancient spices

The Smoke Kitchen is a full-on sensory experience. Smell the firewood, hear the metate grind, feel the comal’s heat, and touch the clay. We use ancient techniques like nixtamalization, tatemado, and molcajete grinding to turn simple ingredients into unforgettable Mexican flavors.
